Food preservation remains a critical aspect of food security and safety, particularly given the increasing demand for minimally processed, naturally preserved traditional foods alongside modern food products utilizing synthetic preservatives. Despite the widespread use of preservatives, there is limited comprehensive comparative data assessing their efficacy across different product categories, which impedes informed decision-making by producers, regulators, and consumers. This study aims to systematically compare the preservative efficacy of traditional and modern food products by evaluating chemical, microbiological, and sensory stability over defined storage periods. The specific objectives include identifying predominant preservatives used in both product types, quantifying microbial loads and chemical stability at regular intervals, and analyzing consumer acceptance related to preservative use. Employing a mixed-methods research design, the study integrates quantitative laboratory analysis with qualitative assessments. The target population comprises three traditional food products—fermented maize porridge, dried smoked fish, and herbal condiments—and three modern counterparts—processed snack foods, canned vegetables, and packaged baked goods. A total sample size of 180 samples (30 per product type) was selected through stratified random sampling across five retail outlets in urban and peri-urban zones. Chemical analyses, including high-performance liquid chromatography (HPLC) for preservative residues and pH and moisture content tests, were conducted alongside microbiological assessments using standard plate count methods and yeast and mold enumeration. Consumer sensory evaluations were conducted with 150 untrained panelists utilizing a 9-point hedonic scale. Data analysis involved descriptive statistics, analysis of variance (ANOVA) to compare preservative efficacy across products, and regression models to predict microbial growth patterns. Additionally, the study advances theoretical understanding of preservative efficacy through the application of Diffusion Theory of Preservation and the Ecological Paradigm in food microbiology, providing a framework for future innovations. The main conclusion suggests that while modern preservatives may offer superior microbiological stability, traditional preservatives possess potential as sustainable alternatives that merit further optimization. Recommendations include encouraging the development of combined preservation strategies to maximize efficacy and safety while addressing consumer preferences for natural ingredients. Future research should explore synergistic effects of natural preservative blends and their applicability to a broader range of food products, as well as long-term storage studies under dynamic environmental conditions. Overall, this study advocates for a balanced approach that harmonizes food safety, health-conscious consumer demands, and technological advancements in food preservation.
