Chapter One provides an introduction to the research topic, including the background of the study which highlights the issue of food waste in the industry, the problem statement, objectives, limitations, scope, significance, and structure of the thesis. Additionally, key terms are defined to provide clarity throughout the thesis. Chapter Two consists of a comprehensive literature review that examines existing studies on food waste management, value-added product development, and sustainability in the food industry. This chapter will provide a theoretical framework for the research and identify gaps in the current literature.
