Understanding how different processing techniques affect allergen content is crucial for developing strategies to mitigate allergen exposure and improve food safety for allergic consumers. This study will involve the analysis of allergen levels in raw and processed food samples using advanced analytical techniques, such as enzyme-linked immunosorbent assays (ELISA) and mass spectrometry.
