This project examines the environmental impacts of various culinary and food service practices. It analyzes the life cycle impacts of different food production, distribution, preparation and waste management methods commonly used in commercial and institutional kitchens. Specific practices evaluated include sourcing of ingredients, energy and water usage, chemical and material inputs like packaging, transportation and delivery logistics, menu planning, portion sizes, cooking and storage methods, and waste generation.
