Abstract
As the global population grows and consumption patterns shift toward more resource-intensive Western diets, the environmental impacts of our food system are becoming increasingly unsustainable. Meat and dairy production require significantly more land, water and fossil fuel inputs compared to plant-based foods like grains, vegetables and fruits. Transitioning diets toward more plant-based options and reducing meat consumption represents an opportunity to lower our environmental footprint. This project will examine the environmental impacts of different dietary patterns, present recommendations for more sustainable diets, and explore strategies to promote behavioral changes toward plant-forward eating. Barriers and opportunities for transitioning diets will also be discussed.
