**<br>This research project aims to optimize food fortification processes as a strategy to combat nutrient deficiencies in vulnerable populations. Nutrient deficiencies remain a significant public health concern globally, particularly in regions where access to diverse and nutritious foods is limited. Food fortification, the addition of essential nutrients to commonly consumed foods, has been recognized as an effective approach to address these deficiencies. However, the effectiveness of fortification programs depends on various factors, including the choice of fortification vehicle, fortificant selection, processing conditions, and storage stability. This study will investigate methods to enhance the efficacy of food fortification through optimization of these factors, with a focus on improving nutrient bioavailability, sensory attributes, and cost-effectiveness. The findings of this research will contribute to the development of evidence-based strategies for addressing nutrient deficiencies and improving public health outcomes.<br><br></p>
