Abstract
The food industry is constantly seeking innovative methods to extend the shelf life of food products while maintaining their safety and quality. In response to this demand, this research project focuses on the development of a novel food preservation technique using natural antimicrobial agents. Natural antimicrobial agents have gained significant attention due to their effectiveness in inhibiting the growth of pathogens and spoilage microorganisms in food products, as well as their perceived safety and consumer preference compared to synthetic additives. The research begins with a comprehensive review of the literature on natural antimicrobial agents, their mechanisms of action, and their applications in food preservation.
